St. Louis Ribs are the darling of the competition BBQ circuit. These ribs come off the backside of the pork belly and have a completely different texture and flavor from Baby Back Ribs. These ribs contain more fat than Baby Backs and render a more tender and juicy finished product. We like ours Memphis Style with a dry rub and nothing else. Smoked slowly over fruitwood, these ribs will fall off the bone and leave you with finger-licking goodness and a smile a mile wide.
